LIME-GINGER BUNDT CAKE
Cake:
2T plus 1 ¼ C granulated sugar
2 ½ C flour
2 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp salt
1 C low fat buttermilk
1/3 C canola oil
1 Tbs grated lime zest
2 Tbs lime juice
1 Tbs minced fresh ginger
2 large eggs
1 large egg white
Glaze:
1 C confectioner’s sugar
2 Tbs low fat buttermilk
1 Tbs grated lime zest
1 Tbs lime juice
Preheat oven to 350 degrees
Spray Bundt pan with nonstick spray.
Sprinkle bottom and sides with the 2T granulated sugar.
Mix together the remaining 1 ¼ C granulated sugar, flour, baking powder and soda, cinnamon, and salt in a large bowl. Mix buttermilk, oil, lime zest, lime juice, ginger, eggs, and egg white together in a medium bowl. Add buttermilk mixture to the flour mixture, stirring until just blended. Pour batter into the pan and bake for 45-50 minutes. Let cool on a rack for 10 minutes, then remove from pan and cool completely.
For the glaze, mix together all ingredients in a bowl until smooth. Drizzle glaze over the cake and serve. Serves 14.
