I love vegetables. (I always was a little different.) The more I eat them, the more I crave them! But even I can go through stages when I don't eat as many as I should. That's why I like to keep reminders and motivators around me.
Fortunately for me, my dragon boat team, Survivors In Sync, has been receiving organic vegetable donations from a generous local farm, Aloe Organics. This has motivated all of us on the team to eat more vegetables. We share recipes and encourage one another to try new kinds.
I also have a group on Facebook called Juicing Up Life where we share juicing, blending and smoothie recipes. This is a great way to easily add in fruits and even vegetables every day. I start most days off with a blueberry/spinach smoothie. It might not sound so appealing, but it is delicious!
Still not convinced? Try watching some documentaries on the subject. If you are a member of Netflix or Youtube, there are plenty of movies to inspire you to eat a more plant-based diet. Some of my favorites are Forks Over Knives, Food Matters, Crazy Sexy Cancer; and Fat, Sick, and Nearly Dead – to name a few.
These are my motivators, but let me know what motivates you. I’m always searching for more tools to keep me on track. Maybe together we can make 2015 our year of eating our vegetables.
